Bolivia Finca Las Alasitas

Las Alasitas is a small farm owned by Pedro Rodríguez, in a steep mountain valley about 10 kilometres from Caranavi, in Bolivia's La Paz department at the edge of the Amazon. It is one of 12 farms the Rodríguez family run as Fincas Los Rodríguez, begun in 2012 to lift the region's declining coffee production and show local growers what modern, scientific farming could achieve. Over the past decade, under Agricafe, the family has become a driving force behind Bolivian specialty coffee, building both its quality and its market abroad.

Planted in 2014 across 20.6 hectares, the farm now doubles as Agricafe's variety nursery, where seedlings are raised for the family's own farms and the smallholders they work with. This caturra, grown on a small hill and laid out in ordered circular rows, is handpicked over several passes, taken to the family's Buena Vista mill, and processed washed.

step 1Open and tear along perforated line.
step 2Hang drip bag over cup.
step 3Pour 40ml to fully saturate grounds. Allow to bloom.
step 4Slowly top up to 180ml. Let it finish dripping before removing bag.
For a more concentrated cup, reduce final yield to 140 - 150ml.
