Bolivia Finca Floripondio

Finca Floripondio is one of the newer farms in the Rodriguez family's estate group, which is run through their exporter Agricafe. Founder Pedro Rodriguez, a former banker and one of the pioneers of Bolivian specialty coffee, established it in 2014 near Samaipata, in the Santa Cruz department, a region not traditionally associated with coffee. Today he farms it alongside his children Daniela and Pedro Pablo. At 1710 masl, with cool nights, high humidity, and a distinct soil profile, the site serves as the family's varietal testing ground, more than sixty varieties are planted here, the Java among them, grown from seedstock originally brought from Nicaragua.

Processing follows the family's proprietary coco natural method. The cherries undergo initial sun oxidation, after which drying is completed in a cacao drying machine rather than on patios or raised beds. This mechanical stage is the defining feature of the method, by maintaining consistent temperature and airflow, it achieves a controlled, uniform rate of moisture reduction that is difficult to replicate under open air conditions. The result is the gradual development of sweetness and a clean cup, avoiding the uneven drying that can produce excessive body or muddled flavour in conventional naturals.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to an espresso profile. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing balance and body to the cup. Flavours become most expressive around the 2 month mark, and some denser coffees continue to improve with extended rest, deepening in sweetness and texture.
