Brazil Daterra Blossom

Daterra is one of Brazil's most established and research driven estates, set in the Cerrado Mineiro near Patrocínio, in Minas Gerais. Across a large, sustainability focused property it has developed proprietary approaches to variety selection and processing, and maintains its own named lineages rather than relying solely on standard commercial cultivars.

This lot pairs two of those varieties. Guarani is a specific selection from Daterra's breeding program. Aramosa is the more unusual of the two, an interspecific cross of arabica and racemosa, still being stabilised by Daterra in collaboration with the Agronomic Institute of Campinas (IAC). Its defining trait is a naturally very low caffeine content, roughly 0.3–0.8%, against 1.2–1.8% for standard Arabica, inherited from the drought and pest resistant racemosa parent, and it tends to produce a sweet, floral, tea like cup with low astringency.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to a filter profile, developed on the lighter spectrum. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing clarity and balance to the cup. Flavours become most expressive around the fifth week, and some denser coffees continue to improve with extended rest, reaching a deeper, smoother character after up to two months.
