Ethiopia Elto Hamasho

This lot comes from Elto Coffee, a specialty exporter in Sidama, Ethiopia, founded by Eliyas Dukamo and Atiklit Dejene. Eliyas grew up in the Dukamo family behind Daye Bensa, one of the region's most respected coffee operations, while Atiklit honed her quality control expertise at the renowned Gesha Village. Together they built Elto, a name meaning abundance in the Sidama language, with a focus on competition grade microlots that push Ethiopian coffee to ever higher standards.

The coffee is processed at the Hamasho station in the Bensa district, where more than 600 smallholders deliver their ripe cherry. This washed lot is made with real care, only the ripest cherries are selected and floated, wet fermented, then slowly dried on raised beds and shaded through the hottest hours to keep the drying even.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to a filter profile, developed on the lighter spectrum. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing clarity and balance to the cup. Flavours become most expressive around the fifth week, and some denser coffees continue to improve with extended rest, reaching a deeper, smoother character after up to two months.
