Kenya Kirinyaga Karimikui

Karimikui is a wet mill in Kirinyaga County, in the southern foothills of Mount Kenya, run by the Rung'eto Farmers Cooperative Society, one of three factories in the co-op, alongside Kii and Kiangoi, serving several thousand smallholder members. Cherry is supplied by hundreds of small farmers working the rich red volcanic soils of the region.

Processing follows the K72 method, a Kenyan fully washed protocol distinguished by extended, multi-stage fermentation totalling approximately 72 hours. Cherry is depulped on the day of harvest, dry fermented to degrade the mucilage, washed and density graded in channels, fermented a second time, then soaked in clean water before slow drying on raised beds. The repeated fermentation and washing provides multiple points of impurity removal, producing the clarity, bright acidity, and structural definition characteristic of washed Kenyan coffees.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to a filter profile, developed on the lighter spectrum. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing clarity and balance to the cup. Flavours become most expressive around the fifth week, and some denser coffees continue to improve with extended rest, reaching a deeper, smoother character after up to two months.
