Panama Altieri Chombi RFF

From Altieri Chombi in Panama, this Gesha comes from Altieri’s family, named Chombi plot, part of a farm where each lot is named after a grandchild, reflecting a deeply personal, precision driven approach to coffee production.

This lot is processed using Altieri’s River Flow Fermentation (RFF) method, where ripe cherries are sealed in bags and submerged in a cold river for three days. The naturally low temperature, oxygen limited environment slows fermentation, preserving clarity while developing layered aromatic complexity. After fermentation, the cherries are moved into a controlled drying room where temperature and humidity are carefully managed to stabilise the coffee and refine structure.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to a filter profile, developed on the lighter spectrum. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing clarity and balance to the cup. Flavours become most expressive around the fifth week, and some denser coffees continue to improve with extended rest, reaching a deeper, smoother character after up to two months.
