Panama Elida Estate

Elida Estate is one of Panama's most decorated farms, set high in the Alto Quiel area of Boquete on the slopes of Volcán Barú. Run by the Lamastus family, it brings the same altitude, volcanic soil, and meticulous milling to every variety it grows. Pacamara is a variety with real presence. Created in El Salvador in the 1950s by crossing Pacas with Maragogype, it produces some of the largest seeds in coffee and a cup known for its size and complexity, bright citrus and florals with a full, syrupy body.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to a filter profile, developed on the lighter spectrum. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing clarity and balance to the cup. Flavours become most expressive around the fifth week, and some denser coffees continue to improve with extended rest, reaching a deeper, smoother character after up to two months.
