Hacienda Barbara sits in Jaramillo, one of Boquete's most recognised growing zones. Managed by agronomist Hunter Tedman, the 2 terms president of the Specialty Coffee Association of Panama. The farm has spent two decades working the same volcanic soil with the same level of precision. The natural here is executed with restraint. Whole cherries dried on raised beds under controlled conditions, monitored closely enough that the fruit enhances rather than dominates. With gesha, that distinction matters. The variety is unforgiving. Pushed too hard, it loses definition. Handled correctly, it opens up into something with very little resemblance to conventional coffee.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to a filter profile, developed on the lighter spectrum. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing clarity and balance to the cup. Flavours become most expressive around the fifth week, and some denser coffees continue to improve with extended rest, reaching a deeper, smoother character after up to two months.
