Peru Tapaco Pampa

This lot comes from Tapaco Pampa in the Inkawasi Valley of Cusco, where Richard Chavez Leon farms coffee at around 2,040 metres. The valley is remote and challenging to reach, but its high elevation and distinct growing conditions have produced some particularly expressive coffees. For Richard, working with these coffees means bringing out the character of the valley while preserving what makes each variety distinctive.

The variety is SL09, an uncommon selection from the Ethiopian Legacy group that was originally developed through Scott Agricultural Laboratories in the 1930s. While SL28 and SL34 became widely established in East Africa, SL09 has remained far less common. Grown here in the highlands of Peru and processed as a washed coffee, it takes on a delicate, structured character that reflects both the variety and its home in Inkawasi.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to a filter profile, developed on the lighter spectrum. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing clarity and balance to the cup. Flavours become most expressive around the fifth week, and some denser coffees continue to improve with extended rest, reaching a deeper, smoother character after up to two months.
