Yemen Al Hayma Reserve Microlot

The coffee is grown in Al Hayma, a mountainous district west of Sana'a and one of Yemen's most established growing areas, where production is concentrated across Al Hayma Al Dakhiliya, Al Hayma Al Kharijiya, and neighbouring Haraaz. Farms here sit at exceptional elevation, commonly between 2200 and 2400masl, and are worked by smallholders on very small plots, some yielding only a few kilograms in a season.

The variety is Udaini, an heirloom indigenous to Yemen and among the oldest cultivated coffee varieties in the world. Grown at this altitude, it is prized for its intensity and depth of cup. Processing is an extended anaerobic natural. Fully ripe cherries are sealed whole in airtight tanks and fermented for 142 hours, then dried slowly on raised beds over roughly three weeks.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to an espresso profile. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing balance and body to the cup. Flavours become most expressive around the 2 month mark, and some denser coffees continue to improve with extended rest, deepening in sweetness and texture.
