Yunnan The Nest Estate

The Nest Estate is located in Yunnan, China, where Syrina was introduced and developed after being brought from Thailand. The variety was first identified in Maneepruek, a mountain village along the Thai and Lao border, and was named Syrina by producer Kaleb Jordan after his daughter. At The Nest Estate, the variety has been cultivated and further developed for its distinctive cup character, showing bright acidity alongside floral aromatics and layered tropical and stonefruit notes.

This lot is processed as a Darkroom Drying NaturalFully ripe red cherries are selectively harvested, floated and UV treated before being placed into sealed barrels for 2 to 3 days of natural fermentation. The barrels are rolled twice every 12 hours to keep the fermentation even and controlled. After fermentation, the cherries are dried under the sun, with the process carefully managed to develop tropical fruit character while retaining sweetness and clarity. The result is intended to bring out Syrina's bright acidity and fruit character while building a deeper sweetness and smooth, tea like finish.

Our roasting approach requires coffee to rest after roasting, allowing flavour to develop and settle before brewing.

This coffee is roasted to an espresso profile. We recommend enjoying it after resting for a minimum of 14 days post roast. This encourages more even extraction, bringing balance and body to the cup. Flavours become most expressive around the 2 month mark, and some denser coffees continue to improve with extended rest, deepening in sweetness and texture.
